Thanksgiving Thursday ~~ Next Thursday, but who's counting!!!

Thanksgiving is ONE WEEK FROM TODAY!!!
And is this the way you feel about it?!!

Well, don't my friends, I've got you covered.
Well sort of...
We've talked turkey,
covered sides &
cranberry (extensively, it gets a bad rap)
anyway...
discussed stuffin' (for all you southern gals)
&
dressing (for all you northern gals)
&
decorating.....
& today we talk desserts ~~
oh yeah, AND.....
Cornucopias!!!

I do love me a pretty cornucopia to grace my table or at least an end table.
But I am a little weird in the cornucopia department, because I only put it out like the week of Thanksgiving usually.
So I'll be getting that baby out....ummmm.....TODAY!!!
Have I mentioned THANKSGIVING IS NEXT WEEK!!!!!
anyway......
Now look at this pretty cornucopia (could I please type that word a little more?)
(That is one of those words that does not just fly off the fingers, go on give it a try....
see what I mean?)
Wow, seriously digressed there....
anyway..... back to the cornucopia department..... =)
I love this one....look how pretty ~~
And this one is just smashing with all of the colors ~~
and with my love for all things sunflowers ~~ it fits the bill!!
My own cornucopia (there I go again =) is one I made several years ago,
but I still love it. It made need a little shooshing up, but that's just fine with me.
They are really easy to make. Just get you a wicker cornucopia and fill it. done. easy. love.it.

Now onto .....


Now of course we will have the obligatory Pumpkin Pie.
Yep made just like the can says to.
And sometimes I go rogue (hahahahahahaha....) and make it from the already ready pumpkin pie can ~~ gasp!! I know!!! Hey some years have warranted that, but not this year.
This year I will be adding my own spices, thank you very much.
But if you decide to go rogue (oh man....heeheeheehee.......) pick up the can with all the spices already spiced and you too can have a lovely, nobodywillevenknowyoudidn'taddthecinnamonyourself
kind of pie ~~ delish!!!!!

This year, I'm gonna make Turtle Pumpkin Pie as well.
Now don't you fret..........
It sounds diet-blowing, but this one can be made "figure friendly" to quote Rachael Ray.
I mean seriously, how good does that look?

Turtle Pumpkin Pie

1/4 cup plus 2 Tbsp caramel ice cream topping, divided

1 Graham Pie Crust

1/2 cup + 2 Tbsp Pecan Pieces, divided

1 cup Cold Skim-Milk

2 pkg (3.4 oz each) JELL-O Vanilla Flavor Sugar-Free Pudding

1 Cup Canned Pumpkin

1 tsp Ground Cinnamon

1/2 tsp Ground Nutmeg

1 tub (8 oz) COOL WHIP Whipped Topping, thawed, divided

Pour 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecans.

Beat milk, pudding mixes, pumpkin and spices with whisk until blended (about 2 minutes). Stir in 1 1/2 cups COOL Whip. Spoon into crust.

Refrigerate at least 1 hour. Top with remaining COOL WHIP, caramel topping and pecans just before serving. Enjoy!!

Pecan Pie!!!

There are some things in Dak's estimation that you MUST have for Thanksgiving, or seriously just stay home....because it wouldn't be Thanksgiving to him without Sweet Potato Casserole and Pecan Pie!!!!! (of course, I'm kidding about the stay-at-home thing ~~ come and join us in our fun if you are in the SW MO area on Thanksgiving....I'll take care of Dak's need for PP and SPC ~~ anyway....boy did I digress again?!!)

Probably about Monday I will post my two menus. Yes two.
One for everyone and then the one I will be eating.
Now that will be fun!!!
So today I'm off with coupons in hand, to do my Thanksgiving shopping ~~ YAY!!!

  2. Honestly, I'm so glad that I don't have to do all that cooking/baking on Thanksgiving... we still go to my Mom and Dad's.

    But, I LOOOOOOVVVVEEE pumpkin pie!!

    I can just sense all your Thanksgiving excitement in the typing of the word cornucopia! Now I can see why it is so much fun.

    We'll be having Pumpkin Pie, Chocolate Cream pie for the kids, Lemon Merinque and Pumpkin Cheesecake.

    Love the recipe for Pumpkin Turtle however, now where have you been hiding my sweet perfection of caramel goodness?

  8. Mmm... The turtle pumpkin pie looks good, and I don't like nuts or most pies. :)

    The concert I am going to is Apologetix, a Christian parody band. I've seen them a bunch of times already, but am always up to seeing them again. :)
