Healthy Fried Potatoes....No really..... Not jk'ing

When I was growing up fried potatoes were a staple in our home. My mom made the best fried potatoes. They were sooooooo good. They just weren't very good for you.

Now adays I don't eat anything greasy, but I love me some fried potatoes, so what's a girl to do? ~~ Make her own healthy style.

I made these tonight. Dick and I really enjoyed them. (Dak is at a tennis match, but I'm sure he will love them to.)

So let's get to the recipe shall we?!! ~~

Healthy Fried Potatoes

7 Red Potatoes (small to medium size)
1 Small Vidalia Onion, chopped
Salt
Rosemary
Chives
Pam
Water

Clean potatoes and slice into thin rounds. Spray pan liberally with Pam spray (or the like). Add potatoes and onions. Add salt to taste. Cook on medium until potatoes start to get soft. Add rosemary and cook until potatoes are done. As the potatoes cook they will start to stick to the bottom of the pan, just add a little water as you go, until the potatoes are done.

Add chives at the very end.

Just a note, I snipped a couple of rosemary twigs from my garden, but only used one, and I cut two chives but only used one for two servings.

These were just delicious. I served it with a lovely spring salad. What a nice supper on a warm spring evening.

  1. They sound delicious. I will have to give them a try. Can white potatoes be used instead? Can dried rosemary be substituted for the fresh? And the Vidalia onions aren't out here yet in my part of the country, but what about shallots?

  2. Oh wow... those sounds WONDERFUL! I'll eat a potato ANY way - especially those of the unhealthy kind... so I'm anxious to try this much healthier way to go!!!
