My love of Steel Cut Oats

Okay so I have a new food love and it is these lovelies...
Yep, Steel Cut Oats~~

I've heard about them for a long time, but they have a rather bad reputation for being hard to cook and taking a really long time, so I hadn't ever given them a try.

Well back in September when I went Vegan (mostly) I decided I'd buy some sometime and give them a try. Well I finally bought some a couple of months ago and finally gave them a try this week. And oh my stars, where have you been all my life ~~ SCO's are DELISH!!

Now the interesting thing about them is that they really don't resemble the oats I have come to know and love, as you can see from the picture above. Nope these are much different looking and tasting for that matter.

I'd like to share a SCO's recipe with you that I've been enjoying lately. SCO's stay with me until lunch. In fact today I ate breakfast just after 8:00 am and wasn't even hungry when lunch rolled around. That is great!!!

So let me share this recipe for SCO's:

Steel Cut Oats with a Cherry on Top

1/2 cup Steel Cut Oats
2 cups water
1/2 tsp salt
1/4 tsp cinnamon (or a little more if you like)
1 cup frozen cherries
1 teaspoon vanilla

Put oats, water, salt and cinnamon in a pan. Bring to a boil and then put lid on pan and turn down REAL low and cook for 25 minutes.

Cut cherries in half and add cherries and vanilla and cook 10-15 minutes more.

This makes two servings.

I serve mine with a tablespoon or so of agave nectar. Delish!!!

You can also make this with blueberries or blackberries instead of cherries. Equally as delish!!

    I have never heard of these before and this recipe you have listed sounds so heavenly and filling at the same time. Where do you get the oats?

  2. I am behind the times. I have never heard of these tasty treats. They sound good though and may have to try them as a substitute for oatmeal.
